Spinach And Salmon Fish Cakes Recipe

 

Served on a bed of stir fried Spinach and Onion. You could have it with salad instead with a slice on lemon

 

Ingredients (Serves 4):

For the fishcakes:

300 g salmon

1 egg

60 g fine oats

1/2 onion, finely cut

100 g fresh spinach, washed

fresh black pepper and salt

 

For the Stir fry:

360g Spinach

½ onion chopped

 

Directions:

 

1. Pre heat the oven at 200°C

 

2. Stir fry the onion and spinach for the fishcake for two minutes

 

3. With a fork mash and mix together in a large bowl the salmon, egg, fine oats, onion, spinach and fresh black pepper & salt (The mixture should be stiff enough to form patties, but not too dry)

 

4. Form into patties

 

5. Put the patties on a baking paper (on a baking sheet) in the oven for about 12 minutes at 200°C

 

6. Stir Fry the rest of the spinach and onions then serve the fish cakes on top of the spinach.
