These are tasty little treats perfect for a snack, they are easy to prepare and High in protein, low in carbs and in fat.

Ingredients (16 muffins):

  • 200 g cottage cheese
  • 200 g fresh spinach (washed)
  • 200 g feta light
  • 800 g chicken breast/filet (raw)
  • 2 eggs
  • 2 egg whites
  • fresh black pepper and salt

Directions:

  1. Put all ingredients together in a food processor and mix all the ingredients together and season with black pepper and salt.
  2. Divide the mixture over 16 cupcakes using a silicone cupcake mould (or similar). If you have no cupcake moulds you can just form them into balls
  3. In a pre-heated oven at 180°C cook for 30 minutes
  4. After removing the chicken from their moulds put them back in the oven at 200°C for 10 minutes
