CHICKEN, SPINACH AND CHEESE MUFFINS

These are tasty little treats perfect for a snack, they are easy to prepare and High in protein, low in carbs and in fat.

Ingredients (16 muffins):

200 g cottage cheese
200 g fresh spinach (washed)
200 g feta light
800 g chicken breast/filet (raw)
2 eggs
2 egg whites
fresh black pepper and salt

Directions:

Step 1 – Put all ingredients together in a food processor and mix all the ingredients together and season with black pepper and salt.

Step 2 – Divide the mixture over 16 cupcakes using a silicone cupcake mould (or similar). If you have no cupcake moulds you can just form them into balls

Step 3 – In a pre-heated oven at 180°C cook for 30 minutes

Step 4 – After removing the chicken from their moulds put them back in the oven at 200°C for 10 minutes
