Ingredients (Serves 4):
For The Base:

  • 1 egg
  • 500 g chicken breast/filet
  • black pepper & salt
  • optional: chilli powder or pizza spices for example oregano, parsley etc.

For the Topping:

  • 1 bell peppers (1/2 green, 1/2 yellow)
  • 1/2 onion
  • 125 g low fat mozzarella
  • 125 g mushrooms
  • Tomato sauce (mix some normal and concentrated)

  1. Put the chicken in a blender or food processor and blend
  2. Add the blended chicken, egg, pepper & salt and chilli powder (optional) in a mixing bowl and mix thoroughly.
  3. Pat into the base of a baking dish so that the whole base is covered. (I put first some baking paper in the baking dish) Or spread on a baking paper covered baking tin.
  4. Pre-heat oven at 200 degree Celsius and cook pizza crust for about 20- 30 minutes or until the mixture is a dark brown. Then let it cool down for about 10 minutes
  5. Then spread the tomato sauce on the pizza crust then add the rest of your toppings and then place back in the oven and cook for a further 15-20 minutes
