Broccoli Hash

Ingredients

400g /14 oz floury potatoes (e.g Maris Piper)  cut into 1 cm Cubes

175g broccoli, cut into florets

2 tbsp sunflower oil

1 onion,finely chopped

1 large red pepper, cut into small dice

1/4 tsp dried chilli flakes

4 Large eggs

Salt and Pepper

Method

Cook the potatoes in lightly salted boiling water for 6 minutes. Drain well. Blanch or steam the broccoli for 3 minutes. Heat the oil in a large frying pan over a fairly high heat, add the onion and red pepper and fry for 2-3 minute to soften. Add the potatoes and cook turning occasionally for 6-8 minutes until tender. Stir in the broccoli and chilli flakes then leave over a low heat , turning the mixture occasionally until golden brown. Season to taste.

Meanwhile , bring a pan of water to just simmering point . Break the eggs into the water and poach gently for 3-4 minutes, until softly set.

To serve , spoon the hash onto warmed plates and top each portion with one of the eggs.
